CHEESY SCALLOPED POTATOES

These cheesy scalloped potatoes are rich, creamy, and loaded with melted cheese in every layer. Thinly sliced potatoes are baked to golden perfection in a simple cheese sauce made with sharp cheddar, giving every bite a satisfying flavor. This dish is ideal for holiday dinners, family gatherings, or anytime you need a crowd-pleasing side. For an added twist, try adding caramelized onions or bacon!

  • 2 pounds Yukon gold potatoes, peeled and thinly sliced (1/8-inch thick)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup heavy cream, warmed
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and ground black pepper, to taste
  • Fresh parsley or chives, chopped, for garnish (optional)

Instructions

Preheat Oven: Preheat the oven to 375°F. Grease a 9×13-inch baking dish with butter or non-stick spray.

Prepare Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, until the mixture is bubbly and lightly golden. Gradually whisk in the milk and cream, stirring constantly until the sauce thickens, about 5-7 minutes.

Add Cheese to Sauce: Remove the saucepan from heat and stir in 1 1/2 cups of the cheddar cheese, the Parmesan, garlic powder, and onion powder. Season with salt and pepper to taste, and stir until the cheese is fully melted and the sauce is smooth.

Assemble the Dish: Arrange half of the sliced potatoes in the prepared baking dish, slightly overlapping each slice. Pour half of the cheese sauce over the potatoes, spreading evenly. Arrange the remaining potato slices on top and pour over the remaining cheese sauce.

Top with Cheese and Bake: Sprinkle the remaining 1/2 cup cheddar cheese over the top of the dish. Cover with foil and bake for 45 minutes. Remove the foil and continue baking for an additional 15-20 minutes, until the potatoes are tender and the top is bubbly and golden.

Garnish and Serve: Allow the scalloped potatoes to cool for 5-10 minutes before serving. Garnish with fresh parsley or chives, if desired.

Notes

For Extra Flavor: Add chopped fresh rosemary or thyme to the cheese sauce for an herby twist.

Storage: Leftovers can be refrigerated in an airtight container for up to 3 days.
