1 pound ground duck

2 tablespoons vegetable oil

1 medium onion, sliced

2 bell peppers (any color), sliced

1 cup snap peas

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili garlic sauce (optional, for heat)

3 green onions, sliced

1 tablespoon sesame seeds

Cooked white or brown rice, for serving

Instructions

  1. Preparation: In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, and chili garlic sauce (if using). Set aside.
  2. Cooking the Duck: Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground duck and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Vegetables: In the same skillet, add a little more oil if needed and sauté the onion, bell peppers, and snap peas until tender-crisp, about 4-5 minutes.
  4. Aromatics: Add garlic and ginger to the skillet, and cook for another minute until fragrant.
  5. Combine: Return the cooked ground duck to the skillet and pour in the stir-fry sauce. Stir well to combine and heat through, about 2-3 minutes.
  6. Serve the stir-fry over cooked rice, garnished with sliced green onions and sesame seeds.

Notes

This dish pairs well with a simple side salad or steamed broccoli.

For extra flavor, marinate the ground duck in the stir-fry sauce for 30 minutes before cooking.
