1 (5-7 pound) Certified Angus Beef ® peeled tenderloin

1 tablespoon dried oregano leaves

1 tablespoon dried thyme

1 tablespoon crushed dried rosemary

2 teaspoons coarse kosher salt

1 teaspoon coarsely ground black pepper

2 teaspoons dry mustard

Instructions

1. Preheat Oven: Preheat the oven to 450°F.

2. Season Tenderloin: Combine the oregano, thyme, rosemary, salt, pepper, and dry mustard in a small bowl. Place the tenderloin on a rack in a shallow roasting pan and rub the seasoning mixture evenly onto the beef.

3. Roast Beef: Roast the tenderloin for 15 minutes at 450°F. Reduce the oven temperature to 325°F and continue roasting for approximately 1 hour, or until the internal temperature reaches 135-140°F for medium doneness.

4. Rest and Serve: Remove the roast from the oven, tent loosely with foil, and let it rest for 15 minutes before carving.
