This mango glazed salmon is a quick, flavorful meal featuring tender salmon fillets glazed with a sweet and tangy mango sauce. Perfect for a weeknight dinner or a special meal for two.

Ingredients

2 portioned salmon fillets

1/2 cup mango puree

1 tablespoon honey

1 tablespoon soy sauce

1/2 teaspoon grated ginger

1/2 teaspoon lime zest

1 tablespoon lime juice

1/4 teaspoon red pepper flakes

Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, combine mango puree, honey, soy sauce, ginger, lime zest, lime juice, and red pepper flakes. Simmer for 3-4 minutes until slightly thickened.
  3. Season salmon fillets with salt and pepper. Place on prepared baking sheet.
  4. Brush salmon generously with mango glaze.
  5. Bake for 10-12 minutes, or until salmon flakes easily with a fork.
  6. Brush (clean brush) with additional glaze before serving.

Cooking Tip: Ensure the salmon is pat dry before seasoning to get a good sear.
