About the process

Reserving your roast holds the items for pickup and purchase. There may be factors out of our control that limit our ability to fulfill a preorder. We’ll do our best to communicate any changes or issues as early as possible.
About our butchering

Unless otherwise noted, all items will be netted to retain shape during roasting (bone-in items are cut off the bone and tied back on; an uncut option is available in-store for the Whole Bone-in Ribeye).
Tenderloins include trimmings packaged separately in the same box; expect trimmed tenderloins to be roughly 60% of the original product size.
All netting is easy to remove at home; trim can be discarded if you prefer.
