Air Fryer Ginger Soy Meatballs with Sesame Slaw

Ingredients
1 pound Certified Angus Beef ® ground beef, 80% to 85% lean
1/4 cup Panko-style bread crumbs
1/4 cup whole milk
1 tablespoon plus 1 teaspoon finely minced fresh ginger
1 tablespoon garlic, minced
4 tablespoons brown sugar, divided
1–1/2 teaspoons coarse kosher salt
1/2 teaspoon black pepper
1 tablespoon plus 2 teaspoons low sodium soy sauce
1 bunch scallions, whites and greens separated, thinly sliced
1 tablespoon rice vinegar
2 teaspoons toasted sesame oil
1 (14-ounce) bag shredded slaw mix
Instructions
1. Prepare Meatballs:
- In a large mixing bowl, combine bread crumbs, milk, 1 tablespoon ginger, garlic, 2 tablespoons brown sugar, salt, pepper, and 2 teaspoons soy sauce. Sit for 5 minutes to allow bread crumbs to soak in liquids. Add beef and scallion whites; mix to combine all ingredients. Portion beef into 12 balls about the size of a golf ball; refrigerate for 10 minutes.
2. Preheat Air Fryer:
- Preheat air fryer to 350°F (175°C). In a medium mixing bowl, make the sesame dressing by combining remaining 1 teaspoon ginger, 2 tablespoons brown sugar, and 1 tablespoon soy sauce, rice vinegar, and sesame oil; whisk to combine, set aside.
3. Cook Meatballs:
- Arrange meatballs in air fryer basket, so they aren’t touching each other. Air fry for 12 minutes or until reaching an internal temperature of 155°F (68°C).
4. Prepare Slaw:
- While meatballs cook, combine slaw mix and scallion greens with sesame dressing.
5. Serve:
- Serve meatballs with sesame slaw.
Notes
Serve with steamed rice or cauliflower rice for a complete meal.
Garnish with sesame seeds and additional sliced scallions if desired.
