4 lb pork spare ribs

1 cup papaya, peeled & cubed

1/2 cup water

1/2 cup white wine

1/2 cup honey

1 garlic clove

1/4 cup tomato paste

Instructions

1. Prepare the Marinade:

  • In a food processor, combine the garlic, papaya, water, white wine, honey, and tomato paste. Pulse until the mixture is finely chopped and well-blended, about 15 seconds.

2. Marinate the Ribs:

  • Place the ribs in a 9×13-inch glass baking dish. Pour the marinade over the ribs, ensuring they are evenly coated. Cover with plastic wrap and refrigerate for at least 6 hours, or overnight for the best flavor.

3. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

4. Cook the Ribs:

  • Remove the ribs from the marinade and shake off any excess. Transfer the marinade to a small saucepan and bring it to a boil over high heat. Reduce the heat to medium-low and simmer for 10 minutes; set aside.
  • Place the ribs on a baking sheet lined with aluminum foil. Bake in the preheated oven for about 1 1/2 hours, or until the meat pulls away easily from the bone. Baste the ribs every 15 minutes with the reserved marinade.

5. Serve:

  • Once cooked, remove the ribs from the oven and let them rest for a few minutes. Serve hot, with extra papaya sauce on the side if desired.

Notes

For a spicier kick, consider adding a dash of cayenne pepper or chili flakes to the marinade. These ribs pair wonderfully with a side of coleslaw or grilled vegetables.
