4 lb pork spare ribs
1 cup papaya, peeled & cubed
1/2 cup water
1/2 cup white wine
1/2 cup honey
1 garlic clove
1/4 cup tomato paste
Instructions
1. Prepare the Marinade:
- In a food processor, combine the garlic, papaya, water, white wine, honey, and tomato paste. Pulse until the mixture is finely chopped and well-blended, about 15 seconds.
2. Marinate the Ribs:
- Place the ribs in a 9×13-inch glass baking dish. Pour the marinade over the ribs, ensuring they are evenly coated. Cover with plastic wrap and refrigerate for at least 6 hours, or overnight for the best flavor.
3. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
4. Cook the Ribs:
- Remove the ribs from the marinade and shake off any excess. Transfer the marinade to a small saucepan and bring it to a boil over high heat. Reduce the heat to medium-low and simmer for 10 minutes; set aside.
