Beef Chili Colorado

Savor the deep, rich flavors of Beef Chili Colorado, a hearty and comforting dish made with Certified Angus Beef® cubed shoulder clod and a blend of three types of chilies. This chili is slow-cooked to perfection, resulting in tender beef in a thick, flavorful sauce, perfect for serving with tortillas or rice.

2.5 lb Certified Angus Beef® cubed shoulder clod

3 ancho chilies, torn

3 guajillo chilies, torn

3 pasilla chilies, torn

4 cups beef stock, divided

2 tsp kosher salt

1 tsp black pepper

2 tsp canola oil

3 garlic cloves, minced

1/2 cup onion, diced

2 tsp ground cumin

1 tsp dried oregano

Small tortillas or prepared rice

Instructions

1. Prepare Chilies: In a saucepan, toast the torn chilies over medium heat for one to two minutes to bring out their flavor. Add two cups of beef stock and bring to a gentle boil. Turn off the heat, cover, and steep for 25 minutes.

2. Season Beef: Season the beef cubes with kosher salt and black pepper.

3. Sear Beef: In a large saucepan or Dutch oven, heat canola oil over medium-high heat. Sear the beef cubes on two sides, working in batches, about five minutes per batch.

4. Add Aromatics: Reduce the heat to medium and add minced garlic, diced onion, ground cumin, and dried oregano. Sear with the beef cubes for two to three minutes.

5. Combine Ingredients: Add the remaining two cups of beef stock and bring to a gentle boil. Transfer the mixture to a slow cooker set to high and cover.

6. Prepare Chili Purée: Transfer the steeped chilies and their broth to a blender and purée until smooth. Add the chili purée to the slow cooker with the beef mixture, stir well, and cook on the high setting for one hour.

7. Slow Cook: Reduce the slow cooker to the low setting, remove the lid, and cook for an additional two hours, stirring periodically. The chili should thicken and develop a rich mahogany color.

8. Serve the Beef Chili Colorado with small tortillas or prepared rice. Enjoy!
