Beef Lettuce Cups

Ingredients
1 pound Certified Angus Beef ® ground beef
2 teaspoons canola oil
1 teaspoon salt
1/2 teaspoon pepper
1 small shallot, minced
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 teaspoon fresh chopped lemongrass
4 scallions, sliced (separating white and green parts)
1 tablespoon soy sauce
1 tablespoon Sambal Oelek chili paste
1 lime, juiced
1/4 cup chopped fresh cilantro
8 mint leaves, roughly chopped
1 large head butter lettuce, broken into individual leaves
Instructions
- In a large skillet, heat canola oil over medium-high heat. Add ground beef and season with salt and pepper. Brown for about 3 minutes; drain any excess oil.
- Stir in shallot, ginger, garlic, lemongrass, and scallion whites (save green parts for garnish). Sauté for 3 more minutes. Stir in soy sauce, Sambal Oelek, and lime juice; simmer for 1 minute.
- Serve beef larb family-style, garnished with cilantro, mint, and scallion greens, with lettuce on the side.
Notes
For a spicier dish, add more Sambal Oelek.
