Ingredients

Scale

2 1/2 pounds Certified Angus Beef ® stew meat, cut into 1/2-inch pieces

2 teaspoons kosher salt

1 teaspoon freshly cracked black pepper

2 teaspoons vegetable oil

1 medium onion, chopped

24 ounces (3 cups) beef broth

1 (20-ounce) jar marinara sauce

2 cups fresh green beans, cleaned and cut into 1-inch pieces

1 medium zucchini, cut into 1/2-inch cubes

1 (9-ounce) container fresh cheese tortellini

Instructions

1. Prepare Beef: Season the beef stew meat with salt and pepper. Heat the oil in a 4-8 quart heavy pan or Dutch oven over medium-high heat. Add the beef and onions, browning them in the oil for about 5-10 minutes, or until the onions are lightly browned.

2. Add Liquids: Stir in the beef broth and marinara sauce. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.

3. Add Vegetables: Stir in the green beans and zucchini, simmering for an additional 5 minutes.

4. Add Tortellini: Stir in the cheese tortellini and simmer for an additional 8-10 minutes, or until the pasta is tender.

5. Season and Serve: Add additional salt and pepper to taste. Serve the stew hot.

Notes

Vegetable Variations: You can add other vegetables like carrots, bell peppers, or spinach to the stew for more variety.

Tortellini Options: Use your favorite type of fresh tortellini, whether it’s cheese, meat, or spinach-filled.

Pairing Suggestion: Serve with a side of crusty bread and a simple green salad for a complete meal.
