Ingredients
1 pound ground beef
1 packet taco seasoning mix
1/2 cup water
8 small flour or corn tortillas
1 cup corn kernels (fresh, frozen, or canned)
1 cup cooked red beans (or canned, drained, and rinsed)
1/2 cup chopped onion
1 cup shredded lettuce
1/2 cup shredded cheddar cheese
1/4 cup chopped cilantro
Avocado Salsa:
2 ripe avocados, diced
1/2 red onion, finely chopped
1 tomato, diced
1 jalapeño, seeded and minced
2 tablespoons fresh lime juice
Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.
- Add the taco seasoning mix and water to the beef. Stir well and simmer for about 5 minutes, or until the sauce has thickened.
- While the beef is simmering, prepare the avocado salsa by combining diced avocados, red onion, tomato, jalapeño, lime juice, salt, and pepper in a bowl. Gently mix to combine.
- Warm the tortillas in a dry skillet or microwave.
- To assemble the tacos, place a spoonful of seasoned beef onto each tortilla. Top with corn, red beans, chopped onion, shredded lettuce, cheddar cheese, avocado salsa, and a sprinkle of chopped cilantro.
- Serve immediately and enjoy!
Notes
For extra flavor, you can grill the corn before adding it to the tacos.
