Ingredients

Scale

2 pounds Certified Angus Beef ® ground chuck

1/3 cup hot sauce, like Frank’s Red Hot

1 large celery root (celeriac), stalks/leaves removed

1 tablespoon fresh lemon juice

1/3 cup sour cream

1 tablespoon Dijon mustard

1/4 teaspoon celery salt

1/4 teaspoon ground black pepper

1 stalk celery, sliced very thin

1 small carrot, peeled and grated

1 large shallot or 1/4 sweet onion, finely diced

1 tablespoon chopped fresh parsley

1/3 cup crumbled blue cheese

6 burger buns

Optional: iceberg lettuce

Instructions

1. Prepare Patties: In a medium bowl, combine the ground chuck and hot sauce. Shape into 6 patties.

2. Make Celery Root Slaw: Peel the celery root and grate it into a large bowl. Immediately toss with lemon juice to preserve color. In a small bowl, combine sour cream, mustard, celery salt, and pepper. Stir the dressing, celery, carrot, shallot, and parsley into the grated celery root. Cover and refrigerate.

3. Grill Burgers: Preheat the grill or a cast iron pan. Grill the patties over medium-high heat to the desired doneness (160°F internal temperature recommended). While still on the grill, top the burgers with crumbled blue cheese.

4. Assemble Burgers: Assemble the burgers with the bottom bun, lettuce (if using), burger patty with blue cheese, and the top bun. Serve the celery root slaw on the burger or as a side.

Notes

Preserve Color: Toss the grated celery root with lemon juice immediately to prevent browning.

Topping Option: Add extra hot sauce or your favorite burger toppings for additional flavor.

Pairing Suggestion: Serve with sweet potato fries or a simple green salad to complement the spicy burger.
