1 1/2 pounds Certified Angus Beef ® sirloin steak, thinly sliced

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

12 ounces egg noodles, cooked according to package instructions

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sirloin steak and cook until browned on all sides. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook for an additional 5 minutes until the mushrooms are tender.
  3. Sprinkle the flour over the vegetables and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring the mixture to a simmer and cook until the sauce thickens, about 5 minutes.
  5. Return the browned beef to the skillet and stir in the sour cream. Cook for 2-3 minutes until the beef is heated through and the sauce is creamy. Season with salt and pepper to taste.
  6. Serve the beef stroganoff over cooked egg noodles, garnished with fresh parsley.

Notes

For extra flavor, use a combination of cremini and white mushrooms.

Serve with a side of green beans or a fresh garden salad for a balanced meal.
