Enjoy a flavorful and vibrant meal with this Coulotte & Hominy Salad. The Certified Angus Beef® Coulotte Roast is seasoned with a homemade Tex-Mex rub and grilled to perfection. Paired with a refreshing salad of hominy, black beans, pico de gallo, and topped with carne asada sauce, cotija cheese, and green onions, this dish offers a delightful blend of textures and flavors.

2.5 lb Certified Angus Beef® Trimmed Coulotte Roast

1 tbsp ancho chili powder

1 tsp ground cumin

1 tsp kosher salt

1/2 tsp sugar

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried oregano

1 (15-ounce) can golden hominy, drained

1 (15-ounce) can black beans, drained

12 ounces fresh pico de gallo

1 tsp Tajin seasoning, plus additional for garnish

1/2 cup carne asada sauce

1/2 cup cotija cheese, crumbled

1 bunch green onions, chopped

Instructions

Prepare Tex-Mex Rub: In a small bowl, combine the ancho chili powder, ground cumin, kosher salt, sugar, garlic powder, onion powder, and dried oregano to make your Tex-Mex rub. Liberally season your coulotte roast with the rub, setting aside one tablespoon for the salad and saving any extra for another time.

Grill Coulotte Roast: Preheat your grill to high heat. Grill the seasoned roast for about four minutes per side, then finish over indirect heat until the internal temperature reaches 120°F. Allow the roast to rest for ten minutes on the cutting board.

Prepare Salad: In a large bowl, combine the drained hominy, black beans, pico de gallo, one tablespoon of your Tex-Mex rub, and one teaspoon of Tajin seasoning. Mix well to incorporate all of the ingredients.

Slice and Serve: Once rested, slice the coulotte thinly against the grain. Drizzle the slices with carne asada sauce and sprinkle with additional Tajin seasoning. Place the steak slices over the prepared hominy salad and garnish with crumbled cotija cheese and chopped green onions.

Resting Time: Allowing the meat to rest ensures that the juices are redistributed throughout the roast, resulting in a more tender and flavorful steak.
