2 pounds pork belly, skin on

1 tablespoon coarse kosher salt

1 teaspoon black pepper

2 teaspoons Chinese five-spice powder

1 tablespoon olive oil

Instructions

1.  Preheat your oven to 450°F (230°C).

2. Prepare Pork Belly: Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Pat the pork belly dry with paper towels.

3. Season Pork Belly: Rub the pork belly all over with olive oil. In a small bowl, mix together the salt, pepper, and Chinese five-spice powder. Rub the spice mixture evenly over the pork belly, making sure to get it into the scored skin.

4. Roast Pork Belly: Place the pork belly on a wire rack in a roasting pan, skin side up. Roast in the preheated oven for 30 minutes.

5. Reduce Heat: After 30 minutes, reduce the oven temperature to 325°F (165°C). Continue roasting for another 1.5 to 2 hours, or until the meat is tender and the skin is crispy and golden brown.

6. Rest and Serve: Remove the pork belly from the oven and let it rest for 10-15 minutes. Slice into pieces and serve with your favorite sides.
