4 duck breasts
Salt and pepper to taste
1 cup fresh orange juice
1/2 cup chicken broth
2 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon soy sauce
Zest of 1 orange
2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)
Fresh thyme sprigs for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.
- Heat a skillet over medium-high heat. Place the duck breasts skin-side down and cook until the skin is crispy and golden brown, about 6-8 minutes. Flip and sear the other side for 2 minutes.
- Transfer the skillet to the oven and roast for 5-8 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove the duck breasts from the skillet and let them rest on a cutting board, tented with foil.
- In the same skillet, add the orange juice, chicken broth, balsamic vinegar, honey, soy sauce, and orange zest. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.
- Slice the duck breasts and arrange on a serving platter. Drizzle with the orange sauce and garnish with fresh thyme sprigs.
- Serve immediately and enjoy!

The orange sauce can be made in advance and reheated when ready to serve.
