Ingredients
4 fish fillets (such as cod, halibut, or tilapia)
1 cup cherry tomatoes, halved
1 zucchini, sliced
1 yellow bell pepper, sliced
1 red onion, thinly sliced
4 cloves garlic, minced
2 tablespoons olive oil
1 lemon, sliced
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C) or preheat the grill to medium-high heat. Cut four large pieces of aluminum foil.
Assemble the Packets: Place one fish fillet in the center of each piece of foil. Divide the cherry tomatoes, zucchini, bell pepper, red onion, and garlic evenly among the packets, placing them around the fish. Drizzle each packet with olive oil and season with salt and pepper.
Add Lemon and Seal: Top each fish fillet with a few slices of lemon. Fold the foil over the fish and vegetables, sealing the edges to create a packet.
Cook the Packets: Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or place on the grill and cook for 15-20 minutes, until the fish is cooked through and flakes easily with a fork.
Serve: Carefully open the foil packets to release the steam. Garnish with fresh parsley and serve immediately.
Notes
Success Tips: Ensure the foil packets are tightly sealed to keep the steam and flavors inside.
Pairing Suggestions: Serve with a side of quinoa, couscous, or a green salad for a complete meal.
