1 pound large sea scallops
Salt and pepper to taste
2 tablespoons olive oil
4 tablespoons unsalted butter
4 garlic cloves, minced
1/4 cup dry white wine or chicken broth
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
Instructions
- Pat the scallops dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until hot.
- Add the scallops in a single layer and cook for 2-3 minutes per side until golden brown and opaque in the center. Remove the scallops from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
- Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes until the sauce has slightly thickened.
- Return the scallops to the skillet and toss to coat them in the garlic butter sauce. Cook for another 1-2 minutes until heated through.
- Sprinkle with chopped parsley and serve immediately.
