Ingredients

1 pound large sea scallops

Salt and pepper to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 garlic cloves, minced

1/4 cup dry white wine or chicken broth

2 tablespoons lemon juice

2 tablespoons chopped fresh parsley

Instructions

  1. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until hot.
  3. Add the scallops in a single layer and cook for 2-3 minutes per side until golden brown and opaque in the center. Remove the scallops from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
  5. Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes until the sauce has slightly thickened.
  6. Return the scallops to the skillet and toss to coat them in the garlic butter sauce. Cook for another 1-2 minutes until heated through.
  7. Sprinkle with chopped parsley and serve immediately.

Notes

Serve with crusty bread to soak up the delicious garlic butter sauce.
