Ingredients
1 1/2 pounds boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
4 large tortillas
1 cup pineapple chunks, fresh or canned (drained)
1 cup shredded lettuce
1/2 cup shredded carrots
1/2 cup sliced red bell pepper
1/2 cup BBQ sauce
1/4 cup chopped fresh cilantro (optional)
Instructions
Prepare the Chicken: Preheat grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing into thin strips.
Assemble the Wraps: Lay out the tortillas on a clean surface. Evenly divide the shredded lettuce among the four tortillas, placing it in the center of each one. Top with sliced chicken, pineapple chunks, shredded carrots, and sliced red bell pepper.
Add BBQ Sauce: Drizzle BBQ sauce over the fillings in each tortilla. Sprinkle with chopped fresh cilantro, if using.
Wrap It Up: Fold in the sides of each tortilla and then roll them up tightly from the bottom to the top to enclose the filling.
Serve: Cut each wrap in half, if desired. Serve immediately and enjoy the tropical flavors.
Notes
Success Tips: Warm the tortillas slightly for easier wrapping. Use fresh pineapple for a juicier and more flavorful wrap.
Pairing Suggestions: Serve with a side of coleslaw or a fresh fruit salad for a complete meal.
