1 (5-6 pound) bone-in leg of lamb

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon fresh oregano, chopped

1/4 cup olive oil

1 tablespoon coarse kosher salt

1 teaspoon freshly ground black pepper

Juice of 1 lemon

Instructions

1. Preheat your oven to 350°F (175°C).

2. Prepare Herb Mixture: In a small bowl, combine the garlic, rosemary, thyme, oregano, olive oil, salt, and pepper to create a herb paste.

3. Season Lamb: Rub the herb paste all over the leg of lamb, ensuring an even coating. Place the lamb in a large roasting pan. Squeeze lemon juice over the top.

4. Roast the lamb in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium. Baste the lamb occasionally with the pan juices.
