3 pounds Certified Angus Beef ® shoulder roast, cut into 2-inch cubes

1 1/2 teaspoons kosher salt

1 teaspoon black pepper

2 teaspoons canola oil

1 onion, diced

2 cloves garlic, minced

3 cups low-sodium beef broth

4 sprigs fresh thyme

2 packages pull apart rolls (look for Hawaiian rolls, 12 per pack)

12 slices provolone cheese

2 tablespoons butter, melted

Coarse salt for topping

Instructions

1. Prepare Beef: Season shoulder roast cubes with salt and pepper. Heat oil in an Instant Pot set to Sauté mode. Brown roast cubes on two sides (about 4-5 minutes).

2. Sauté Vegetables: Add onion and garlic to the pot and sauté, stirring occasionally, for 2-3 minutes.

3. Cook Beef: Add beef broth and thyme to the pot. Secure the lid and set to the Meat/Stew setting (about 35 minutes to cook).

4. Prepare Rolls: Cut each group of 12 rolls horizontally to create a top and bottom layer. Place both bottom layers on a baking sheet and shingle 6 slices of cheese on each.

5. Shred Beef: Release steam from the Instant Pot and remove the lid. Remove cooked roast cubes and place them in a bowl to cool for 10 minutes. Set Instant Pot to Sauté for 10 minutes to reduce the cooking liquid.

6. Reduce Jus: Strain the reduced cooking liquid, reserving it for jus. Skim fat from the top and keep warm.

7. Preheat Oven: Preheat oven to 300°F.

8. Assemble Sandwiches: Shred the roast cubes and spread evenly over the cheese on each group of rolls. Place the top layer of rolls atop the shredded beef. Brush roll tops with melted butter and sprinkle the center of each bun with a pinch of coarse salt.

9. Bake: Bake for 15 minutes and serve with jus. Pull sliders apart or cut and serve separately.

Notes

Browning for Flavor: Ensure you brown the beef cubes on all sides for added flavor and depth in the final dish.

Even Shredding: Allow the beef to cool slightly before shredding to ensure even texture and easier handling.
