Instructions
Crab Cakes
1. Mix Ingredients: In a large bowl, combine mayonnaise, yellow mustard, Worcestershire sauce, egg, dry mustard powder, Old Bay seasoning, and lemon juice. Mix well.
2. Combine Crab and Panko: Gently fold in the jumbo lump crab meat and a splash of hot sauce. Add the panko breadcrumbs and stir until the mixture is tacky.
3. Form Patties: Portion the mixture into 4 large or 8 small crab cakes using an ice cream scooper for equal sizes. Lightly flatten into patties and place on a baking tray.
4. Bake Crab Cakes: Preheat the oven to 400°F and bake the crab cakes for 8-10 minutes.
5. Sear Crab Cakes: Heat a fry pan for 2-3 minutes, then add the cooking oil. Sear the crab cakes at medium-high heat for 2-3 minutes on each side until golden brown.
6. Serve: Serve the crab cakes with a squirt of wasabi aioli.
Maryland Grilled Cheese Sandwich
1. Prepare Sandwich: Butter two slices of thick sliced bread. Place a few slices of cheddar cheese and one crab cake between the bread slices.
2. Grill Sandwich: Sear the sandwich in a pan until the bread is golden brown and the cheese is fully melted.
3. Serve: Serve the Maryland Grilled Cheese sandwich with a side of wasabi aioli for dipping
Notes
Gentle Mixing: Be gentle when mixing the crab meat to avoid breaking up the lumps.
Even Searing: Ensure the crab cakes are evenly seared by pressing down slightly with a spatula while cooking.
Pairing Suggestion: Serve with a light salad or coleslaw to balance the richness of the crab cakes and grilled cheese.
