Ingredients

1.5 pounds lamb shoulder, cut into 1-inch cubes

2 large zucchinis, sliced into 1/2-inch thick rounds

2 bell peppers (red, yellow, or green), cut into 1-inch pieces

2 tablespoons olive oil

3 garlic cloves, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Juice of 1 lemon

1 teaspoon smoked paprika

Salt and pepper to taste

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Marinate the Lamb: In a large bowl, combine the olive oil, garlic, rosemary, thyme, lemon juice, smoked paprika, salt, and pepper. Add the lamb cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for more flavor.

Prepare the Skewers: Preheat the grill to medium-high heat. Thread the lamb cubes, zucchini slices, and bell pepper pieces onto the skewers, alternating between the three.

Grill the Skewers: Grill the skewers for 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.

Serve: Remove the skewers from the grill and let rest for a few minutes. Serve hot, garnished with additional fresh herbs if desired.
