Ingredients
1.5 pounds lamb shoulder, cut into 1-inch cubes
2 large zucchinis, sliced into 1/2-inch thick rounds
2 bell peppers (red, yellow, or green), cut into 1-inch pieces
2 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Juice of 1 lemon
1 teaspoon smoked paprika
Salt and pepper to taste

Instructions
Marinate the Lamb: In a large bowl, combine the olive oil, garlic, rosemary, thyme, lemon juice, smoked paprika, salt, and pepper. Add the lamb cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for more flavor.
