2 lb Certified Angus Beef® Flat Iron Steak

2 cups basil leaves, packed

1/3 cup pine nuts

1/2 cup extra virgin olive oil

1/2 cup grated Parmesan cheese

1.5 tablespoons lemon juice

3/4 teaspoon red pepper flakes

2 garlic cloves, minced

4 garlic cloves, minced (for steak rub)

Salt and pepper, to taste

Instructions

Prepare Pesto: In a food processor, chop the 2 garlic cloves until minced. Add the basil leaves and pine nuts, and pulse a few times to combine. With the food processor running, slowly pour in the olive oil, stopping once or twice to scrape down the sides. Add the Parmesan cheese, lemon juice, and red pepper flakes, and pulse until blended. Season with salt and pepper to taste.

Preheat Grill: Preheat an outdoor grill to medium-high heat and lightly oil the grate.

Season Steak: Rub the steaks with the 4 minced garlic cloves and season with salt and pepper.

Grill Steak: Grill the steaks to your desired degree of doneness on the preheated grill, about four minutes per side for medium. Baste the steaks occasionally with a little of the pesto sauce.

Serve: Once cooked, top the steaks with the remaining pesto sauce. Serve and enjoy!

Notes

Pesto Variation: If you prefer a nuttier flavor, you can toast the pine nuts before adding them to the food processor.

Serving Suggestion: Pair with roasted vegetables or a fresh garden salad for a complete meal.
