2 lb Certified Angus Beef® London Broil Roast

1 cup beef stock

2 tablespoons brown sugar

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

1 tablespoon canola oil

1 tablespoon balsamic vinegar

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons unsalted butter, diced and kept cold

Instructions

1. Prepare Marinade: In a bowl, combine the beef stock, brown sugar, soy sauce, balsamic vinegar, Worcestershire sauce, and Italian seasoning. Marinate the London Broil roast overnight or up to two days for a bolder flavor.

2. Preheat Broiler or Grill: Preheat your broiler or grill.

3. Prepare Roast: Remove the roast from the marinade (set the marinade aside). Pat the roast dry, rub with oil, season with salt and pepper, and place on the broiler pan.

4. Broil or Grill: Broil for 15 minutes, then flip and broil for an additional 12-15 minutes for medium-rare (internal temperature of 125°F). Allow the roast to rest for ten minutes on a carving board, tented with foil.

5. Make Sauce: Bring the reserved marinade to a boil in a small saucepan, then reduce the heat and simmer for ten minutes until reduced by half. Whisk in the cold butter until the sauce is smooth and velvety.

6. Serve: Slice the London Broil very thinly against the grain, plate, and drizzle with the reduced marinade sauce. Enjoy!
