Ingredients
18 small new red potatoes (about 3 lb.), unpeeled and halved
1 teaspoon salt, divided
2 tablespoons olive oil
Dash of pepper
1 cup warm milk
Instructions
1. Cook Potatoes: Place the potatoes in a large saucepan and add enough water to cover them. Add 1/2 teaspoon of the salt. Bring to a boil, then reduce the heat to medium-low. Cover loosely and boil gently for 15 to 20 minutes, or until the potatoes break apart easily when pierced with a fork. Drain well.
2. Mash Potatoes: Using a potato masher, mash the potatoes in the saucepan.
3. Add Ingredients: Add the olive oil, pepper, and remaining 1/2 teaspoon of salt. Continue mashing, gradually adding enough warm milk to reach your desired consistency.
4. Serve warm as a delicious side dish.
Notes
Texture: For a chunkier texture, mash the potatoes lightly. For a smoother consistency, mash more thoroughly and add more milk.
Flavor Enhancement: For extra flavor, consider adding minced garlic or fresh herbs like parsley or chives.
Pairing Suggestion: Pairs well with roasted meats, grilled chicken, or as part of a holiday meal.
