1 Certified Angus Beef ® New York strip roast

1 tablespoon extra virgin olive oil

1 tablespoon kosher salt

2 teaspoons freshly ground pepper

Instructions

1. Preheat Oven: Preheat the oven to 450ºF.

2. Prepare Roast: Place the New York strip roast, fat side up, in a roasting pan fitted with a rack. Rub the roast with olive oil and season all sides with kosher salt and freshly ground pepper.

3. Roast Beef: Place the roast in the oven for about 15 minutes. Reduce the oven temperature to 325ºF and continue cooking for approximately 1 1/4 hours for medium doneness (until the thermometer registers 135-140°F).

4. Rest and Serve: Loosely tent the roast with foil and let it stand for 10 minutes. Slice the roast across the grain and serve.
