6 bone-in, skin-on chicken thighs

1 1/2 pounds baby potatoes, halved

1/4 cup olive oil

1/4 cup lemon juice (about 2 lemons)

4 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 cup chicken broth

1 lemon, sliced

Fresh parsley and lemon wedges for garnish (optional)

Instructions

1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.

2. Marinate the Chicken: Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

3. Preheat your oven to 400°F (200°C).

4. Assemble the Dish: In a large oven-safe skillet or Dutch oven, arrange the halved potatoes in an even layer. Place the marinated chicken thighs on top of the potatoes. Pour the remaining marinade over the chicken and potatoes. Add the chicken broth to the pan and arrange lemon slices on top.
