4 trout fillets, skin-on

1/4 cup all-purpose flour

Salt and pepper to taste

3 tablespoons olive oil

1/4 cup sliced almonds

2 tablespoons butter

Juice of 1 lemon

2 tablespoons fresh parsley, chopped

Instructions

Prepare the Trout: Pat the trout fillets dry with paper towels. Season both sides with salt and pepper, then lightly coat in flour, shaking off any excess.

Toast the Almonds: In a large skillet over medium heat, toast the sliced almonds until golden brown, about 2-3 minutes. Remove from the skillet and set aside.

Pan-Sear the Trout: In the same skillet, heat the olive oil over medium-high heat. Add the trout fillets, skin side down, and cook for 3-4 minutes until the skin is crispy. Carefully flip the fillets and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork. Transfer the trout to a serving platter.
