2 Butterflied trout fillets

1/4 cup all-purpose flour

Salt and pepper to taste

3 tablespoons olive oil

1/4 cup sliced almonds

2 tablespoons butter

Juice of 1 lemon

2 tablespoons fresh parsley, chopped

Instructions

Prepare the Trout: Pat the trout fillets dry with paper towels. Unfold each butterflied trout and slice down the middle giving you four individual fillets. Season both sides with salt and pepper, then lightly coat in flour, shaking off any excess.

Toast the Almonds: In a large skillet over medium heat, toast the sliced almonds until golden brown, about 2-3 minutes. Remove from the skillet and set aside.

Pan-Sear the Trout: In the same skillet, heat the olive oil over medium-high heat. Add the trout fillets, skin side down, and cook for 3-4 minutes until the skin is crispy. Carefully flip the fillets and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork. Transfer the trout to a serving platter.

Prepare the Sauce: In the same skillet, melt the butter over medium heat. Add the lemon juice and toasted almonds, stirring to combine. Cook for 1-2 minutes until the sauce is heated through.

Serve: Pour the almond butter sauce over the trout fillets. Garnish with fresh parsley and serve immediately.
