2 apples, cored and sliced
1 medium onion, thinly sliced
1/2 cup apple cider
1/2 cup chicken broth
1 tablespoon Dijon mustard
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
1 tablespoon butter
Instructions
- Season the pork chops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the apples and onions. Cook, stirring occasionally, for 5-7 minutes, until they begin to soften and caramelize.
- Stir in the apple cider, chicken broth, Dijon mustard, and thyme. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld.
- Return the pork chops to the skillet, nestling them among the apples and onions. Simmer for an additional 2-3 minutes to heat through.
- Finish by adding the butter and swirling it into the sauce until melted and glossy.
