Ingredients
1/2 bunch thyme, leaves only
1/2 bunch fresh sage, leaves only
2 cloves garlic, gently smashed and paper removed
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
Pork crown roast (about 12 to 14 ribs)
Instructions
1. Preheat Oven: Preheat the oven to 375°F.
2. Prepare Herb Mixture: In a small mixing bowl, combine the thyme, sage, garlic, and salt and pepper to taste. Mash to break up the herbs and garlic. Add about 1 cup of olive oil and combine well.
3. Season Pork: Rub the pork crown roast all over with the herb mixture.
4. Prepare for Roasting: Place the pork in a roasting pan. Set aside to bring the pork to room temperature before cooking. If desired, fill the cavity with stuffing.
5. Cover and Roast: Cover the stuffing (if using) and the tips of the rib bones with foil. Place the roast in the oven and bake for 2 hours and 20 minutes, or until a thermometer inserted near the bone registers 150°F.
6. Brown the Stuffing: About 30 to 45 minutes before the roast is done, remove the foil to brown the stuffing and create a crust.
7. Rest and Serve: Remove the roast from the oven, loosely cover with foil, and allow it to rest for 30 minutes before cutting.
