Ingredients

Scale

Pork Cutlets:

4 boneless pork chops, pounded to 1/4-inch thickness

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon paprika

1 teaspoon garlic powder

1/2 cup vegetable oil or enough for frying

Lemon wedges, for serving

Instructions

1. Prepare the Pork:

  • Season the pork cutlets with salt and pepper on both sides.
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with paprika and garlic powder.

2. Bread the Pork:

  • Dredge each pork cutlet in the flour, shaking off any excess. Dip into the beaten eggs, allowing any excess to drip off, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.

3. Fry the Pork:

  • Heat vegetable oil in a large skillet over medium-high heat. The oil should be hot enough that a breadcrumb dropped in sizzles immediately.
  • Fry the breaded pork cutlets in batches, without overcrowding the pan, for about 3-4 minutes per side or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
  • Transfer the cooked schnitzel to a paper towel-lined plate to drain excess oil.

4. Serve the pork schnitzel hot with lemon wedges on the side.

Notes

Pairing Suggestions: Serve with traditional German sides such as spaetzle, potato salad, or a simple green salad. A side of braised red cabbage also complements the dish well.

To Ensure Success: Pound the pork cutlets evenly to ensure they cook at the same rate. Maintain a consistent oil temperature to achieve a crispy crust without burning.

Variations: Try adding Parmesan cheese to the breadcrumb mixture for extra flavor, or use chicken or veal in place of pork for a different twist.
