Ingredients
2 lb fresh mussels
12 oz diced tomatoes
2 garlic cloves, chopped
0.25 cup parsley, chopped
0.5 cup white wine
1 tsp red pepper flakes
1 tsp olive oil
Salt and pepper, to taste
Instructions
1. Prepare Mussels: Rinse the mussels under cold water. Discard any mussels that are open and do not close when tapped.
2. Cook Garlic: Coat a large sauté pan with olive oil over high heat. Add the chopped garlic and cook until soft, about 1-2 minutes.
3. Add Mussels and Wine: Add the mussels to the pan and pour in the white wine. Cover and cook until some of the mussels begin to open, about 3-4 minutes.
4. Add Tomatoes and Seasonings: Once some mussels have opened, add the diced tomatoes. Continue cooking until all mussels have opened, about 5 more minutes. Discard any mussels that do not open.
5. Finish and Serve: Add the chopped parsley and red pepper flakes. Season with salt and pepper to taste. Serve over pasta or with crusty bread for dipping.
Notes
Beard Removal: Palmer’s mussels are clean and typically do not require beard removal. A simple cold water rinse is sufficient.
