68 oz Fresh calamari rings (or 45 tubes cut into rings)

6 oz Bozza Pasta Squid Ink Spaghetti

3 Cloves garlic, smashed

1 Green onion, sliced

2 oz Roasted red peppers, chopped

1 Lemon, for zest & juice

1 Tbsp Olive oil

½ teaspoon Turmeric

Instructions

1. Prep the Calamari: Pat the calamari dry with a clean towel to prevent splattering in the hot pan.

2. Cook the Pasta: In a separate pot, bring water to a boil and add 1 Tbsp of sea salt. Add the pasta to the boiling water and cook for 3-4 minutes, then drain.

3. Sauté Ingredients: In a hot fry pan, add the oil, garlic, and scallions and sauté for 1 minute. Add the calamari rings and stir briefly.

4. Season and Combine: Add turmeric, red peppers, lemon zest, and lemon juice to the pan and stir for one more minute.

5. Mix with Pasta: Combine the sautéed calamari with the pasta and stir or toss to mix well.

6. Serve: Using tongs, twist the spaghetti mixture into the center of a pasta bowl and serve immediately.

Notes

Dry Calamari: Ensure the calamari is thoroughly patted dry to avoid splattering when added to the hot pan.

Quick Cooking: Cook the squid ink pasta just until al dente (3-4 minutes) to maintain its texture when combined with the sautéed ingredients.

Fresh Ingredients: Use fresh lemon juice and zest to enhance the flavors and brighten the dish.
