Ingredients
1 tbsp canola oil
2 tbsp white wine
0.5 celery stalk, diced
1 yellow onion, diced
8 slices raw bacon, diced
1 lb white fish, cut into 1” pieces
0.5 lb 26/30-ct raw shrimp, peeled and deveined
0.5 lb scallops, quartered
0.25 lb clams, chopped
1 qt clam juice
2 qt seafood stock
2 bay leaves
2 thyme sprigs
1 qt heavy cream
2 potatoes, cooked and cubed
0.5 lb salted butter
0.75 lb all-purpose flour
1 tbsp salt
1 tbsp pepper
1 tbsp granulated garlic
2 tbsp dillweed
Instructions
1. Prepare Base: In a large pot, heat canola oil over medium heat. Add diced bacon and cook until the fat is rendered and the bacon begins to brown.
2. Deglaze and Sauté Vegetables: Add white wine to deglaze the pot, scraping up any browned bits from the bottom. Add diced celery and onions, cooking until softened.
3. Add Broth and Herbs: Add bay leaves, thyme, seafood stock, and clam juice. Bring the mixture to a boil.
4. Prepare Roux: In a separate saucepan, melt butter over low heat. Add flour and mix well to form a roux. Cook the roux for at least ten minutes over very low heat, stirring frequently.
5. Combine Cream and Stock: Once the stock mixture comes to a boil, add heavy cream and return to a boil. Gradually add the roux to the boiling mixture, whisking until smooth and free of clumps.
6. Thicken Soup: Reduce heat and simmer until the soup thickens to your desired consistency.
7. Add Seafood and Seasonings: Add granulated garlic, salt, pepper, dill, cooked potatoes, white fish, scallops, clams, and shrimp. Stir well and simmer for an additional ten minutes.
8. Serve hot with oyster or saltine crackers. Enjoy!
