1 bunch scallions, finely chopped

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh cilantro, finely chopped

4 cloves garlic, minced

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

1 teaspoon red pepper flakes

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

Instructions

1. Prepare the Scallion Chimichurri:

  • In a medium bowl, combine the chopped scallions, parsley, cilantro, and minced garlic.
  • Stir in the red wine vinegar, red pepper flakes, salt, and black pepper.

2. Heat the Olive Oil:

  • In a small saucepan, heat the olive oil over medium heat until it just starts to shimmer, but not smoke.

3. Combine and Sizzle:

  • Carefully pour the hot olive oil over the scallion mixture. It should sizzle and release a wonderful aroma. Stir to combine.

4. Add Lemon Juice:
