Ingredients
1.5 lb Certified Angus Beef® 80% Lean Ground Chuck
3.5 tsp salt, divided
0.5 tsp black pepper
1 red onion, thinly sliced
1 cup cider vinegar, divided
3/8 cup brown sugar, divided
1 tbsp whole peppercorns
1 cup water
1 tbsp butter
1 yellow onion, diced
2 garlic cloves, minced
1 cup dark brew coffee
0.5 cup ketchup
2 tbsp yellow mustard
2 tsp paprika
4 slices cheddar cheese
4 hamburger buns
Instructions
1. Form and Season Patties: Form four 6-ounce burger patties and season with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Refrigerate the burgers until ready to smoke.
2. Pickle Red Onion: Place the sliced red onion in a heat-proof bowl. In a small saucepan, add 0.75 cup cider vinegar, 2 tablespoons brown sugar, 2 teaspoons salt, peppercorns, and 1 cup water. Bring to a boil, stirring until the salt and sugar dissolve. Pour the solution over the sliced onion and cover with plastic wrap. Allow to steep for at least one hour.
3. Preheat Smoker: Preheat your smoker with hickory and/or applewood to 275°F. Smoke the patties for 45 minutes to one hour or until they reach an internal temperature of 155°F.
4. Prepare Coffee BBQ Sauce: While the patties smoke, heat butter over medium heat in a saucepan. Add garlic, yellow onion, and 0.5 teaspoon salt. Sauté until the onions are translucent. Pour in coffee, 0.25 cup cider vinegar, 0.25 cup brown sugar, ketchup, mustard, and paprika. Bring to a boil, then reduce to a simmer and cook for 20 minutes. Once reduced, purée the sauce in a blender or with an immersion blender and strain.
5. Build Burgers: Toast the hamburger buns if desired. Place a smoked patty on each bun, top with a slice of cheddar cheese, pickled red onions, and drizzle with the coffee BBQ sauce.
6. Serve the burgers immediately and enjoy!
Notes
Pickling Time: For best results, allow the red onions to steep in the pickling solution for at least one hour. They can also be prepared a day in advance.
