Ingredients
1 (2 1/2 lb) Certified Angus Beef ® Center Cut Chuck Roast
1 1/2 teaspoons chipotle chili powder
1 tablespoon vegetable oil
1 (14 1/2-ounce) can diced tomatoes with green chilis, undrained
Prepared cornbread or corn muffins
Instructions
1. Season and Brown Roast: Press chipotle chili powder evenly onto all surfaces of the chuck roast. Heat the vegetable oil in a stockpot over medium heat until hot. Place the roast in the stockpot and brown evenly on all sides. Pour off the drippings.
2. Simmer Roast: Add the diced tomatoes with green chiles to the stockpot and bring to a boil. Reduce the heat, cover tightly, and simmer for 2 to 3 hours or until the roast is fork-tender.
3. Prepare Sauce: Remove the roast from the pot and keep it warm. Skim fat from the cooking liquid. Return the liquid to the stockpot and bring it to a boil. Cook for 8 to 10 minutes or until the sauce is reduced to about 2 cups.
4. Serve: Carve the roast into thin slices and top with the reduced sauce. Serve with prepared cornbread or corn muffins.
