½ onion, chopped

3 garlic cloves, chopped

¼ cup olive oil

¼ cup balsamic vinegar

¼ cup soy sauce

1 tablespoon Dijon mustard

1 tablespoon rosemary, chopped

1 teaspoon salt

½ teaspoon ground black pepper

1 ½ pounds flank steak

Instructions

1. Prepare the Marinade:

  • In a mixing bowl, whisk together the chopped onion, garlic, olive oil, balsamic vinegar, soy sauce, Dijon mustard, rosemary, salt, and pepper until well combined.

2. Marinate the Steak:

  • Place the flank steak in a large resealable plastic bag. Pour the marinade over the steak, ensuring it is well coated. Squeeze out excess air from the bag and seal it tightly. Marinate in the refrigerator for at least 30 minutes, or up to 2 days for maximum flavor.

3. Grill the Steak:

  • Preheat an outdoor grill to medium-high heat and lightly oil the grate. Remove the steak from the marinade and shake off any excess liquid, reserving the marinade.
  • Grill the steak for 6 to 8 minutes per side, brushing occasionally with the reserved marinade. Cook until the steak is firm and the center reaches an internal temperature of 150°F (65°C) for medium doneness.

4. Rest and Serve:

  • Remove the steak from the grill and let it rest on a cutting board for 5 minutes. Slice the steak thinly across the grain and serve.
