Ingredients
For the Filling:
6 cups fresh peaches, peeled and sliced (about 6–8 peaches)
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 tablespoon cornstarch
1 tablespoon lemon juice
2 tablespoons bourbon
For the Biscuit Topping:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup buttermilk
1 teaspoon vanilla extract
Instructions
Prepare the Filling:
1. Preheat Oven:
- Preheat your oven to 375°F (190°C).
2. Mix Filling:
- In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, and cornstarch. Add the lemon juice and bourbon, stirring gently to combine.
3. Transfer to Baking Dish:
- Pour the peach mixture into a 9×13-inch baking dish and spread evenly
Prepare the Biscuit Topping:
4. Mix Dry Ingredients:
In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
5. Cut in Butter:
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
6. Add Wet Ingredients:
- Stir in the buttermilk and vanilla extract until just combined. Be careful not to overmix.
Assemble and Bake:
7. Top with Biscuit Dough:
- Drop spoonfuls of the biscuit dough over the peach filling, spreading it out evenly. It’s okay if some of the filling peeks through.
8. Bake:
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
9. Cool Slightly:
- Allow the cobbler to cool for at least 15 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
For a non-alcoholic version, omit the bourbon and add an extra tablespoon of lemon juice.
