1 1/2 pounds boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small tortillas

Honey-Lime Slaw:

2 cups shredded cabbage

1/2 cup shredded carrots

1/4 cup chopped fresh cilantro

2 tablespoons honey

2 tablespoons lime juice

1 tablespoon olive oil

Salt and pepper to taste

Instructions

1. Prepare the Chicken: Preheat grill to medium-high heat. In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and black pepper. Rub the chicken thighs with olive oil and coat evenly with the spice mixture.

2. Grill the chicken thighs for 6-8 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing into thin strips.

3. Make the Slaw: In a large bowl, combine shredded cabbage, carrots, and cilantro. In a small bowl, whisk together honey, lime juice, olive oil, salt, and pepper. Pour the dressing over the slaw and toss to coat.

4. Assemble the Tacos: Warm the tortillas on the grill or in a skillet. Divide the sliced chicken among the tortillas and top with the honey-lime slaw.

5. Serve the tacos immediately, garnished with additional cilantro and lime wedges if desired.
