1 pound sushi-grade tuna, diced

1 avocado, diced

2 cups cooked sushi rice

1 cup edamame, shelled and cooked

1 cucumber, thinly sliced

1 carrot, julienned

2 green onions, thinly sliced

1/4 cup soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon sriracha

2 tablespoons mayonnaise

1 tablespoon sesame seeds

1 sheet nori, cut into thin strips (optional)

Salt and pepper to taste

Instructions

  1. Prepare the Tuna: In a medium bowl, mix the soy sauce, sesame oil, and rice vinegar. Add the diced tuna and toss to coat. Let marinate in the refrigerator for 15 minutes.
