Ingredients

2 pounds fresh mussels, cleaned and debearded

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup dry white wine

1/2 cup chicken or seafood broth

1/4 cup fresh parsley, chopped

2 tablespoons unsalted butter

Salt and pepper to taste

Instructions

1. Prepare Mussels:

  • Ensure mussels are thoroughly cleaned and debearded. Discard any mussels that are open and do not close when tapped.

2. Cook Garlic and Tomatoes:

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Add halved cherry tomatoes and cook for another 2 minutes, until they start to soften.

3. Add Wine and Broth:

  • Pour in the white wine and broth, and bring the mixture to a simmer.

4. Steam Mussels:

  • Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes, or until the mussels open. Discard any mussels that do not open.
  • Finish with Butter and Parsley:
  • Stir in butter until melted and combined.
  • Sprinkle with chopped parsley, and season with salt and pepper to taste.

5. Serve:

  • Serve mussels with lemon wedges on the side.
  • Enjoy with crusty bread to soak up the delicious sauce.

You can add a pinch of red pepper flakes for a bit of heat.
