Ingredients
12 large shrimp, peeled and deveined
1/2 pound lump crab meat
4 slices bacon, cooked and crumbled
2 cups romaine lettuce, chopped
2 cups baby spinach
1 avocado, diced
1 cup cherry tomatoes, halved
1 cup cooked corn kernels (fresh or frozen)
2 hard-boiled eggs, sliced
1/4 cup crumbled blue cheese (optional)
1 tablespoon olive oil
Salt and black pepper to taste
Lemon wedges, for garnish
For the Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
Salt and black pepper, to taste
Instructions
Cook the Shrimp: In a large skillet over medium heat, heat 1 tablespoon olive oil. Season shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes per side until pink and fully cooked through. Remove from heat and set aside.
Prepare the Salad: In a large bowl or platter, arrange the chopped romaine and spinach as the base. Add rows of shrimp, crab meat, crumbled bacon, avocado, cherry tomatoes, corn kernels, and sliced hard-boiled eggs. If using, sprinkle crumbled blue cheese on top.
Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.
Assemble: Drizzle the salad with the dressing, garnish with lemon wedges, and serve immediately. Enjoy!
