1 (2 lb) Certified Angus Beef ® top round London Broil

1/2 cup brown sugar

1/4 cup honey

1/2 cup soy sauce

1/4 cup sriracha sauce

2 tablespoons bourbon

1 1/2 teaspoons minced fresh garlic

1 1/2 teaspoons minced fresh ginger

Instructions

1. Marinate Beef: In a medium mixing bowl, whisk together brown sugar, honey, soy sauce, sriracha, bourbon, garlic, and ginger until the sugar has dissolved. Pour the mixture into a zipper-locking plastic bag with the London broil. Refrigerate overnight.

2. Preheat Broiler: Position the oven rack under the broiler and preheat to broil. Remove the roast from the marinade, reserving the remaining marinade. Pat the roast dry and place it in a broiler pan.

3. Broil Beef: Broil the roast for 4-5 minutes on one side. Flip and broil for an additional 4-5 minutes, until the internal temperature reaches 125-130°F for medium rare.

4. Prepare Sauce: In a small saucepan over medium-high heat, bring the reserved marinade to a boil. Reduce the heat to low and simmer for 10 minutes while the roast rests on a carving board.

5. Serve: Slice the roast thinly against the grain and serve covered with the warm sauce.
