Ingredients
1.5 pounds boneless, skinless chicken thighs
1/2 cup teriyaki sauce
2 cups cooked jasmine rice
1 cup broccoli florets
1 cup carrot slices
1 cup snap peas
1 cup sliced bell peppers
1 tablespoon vegetable oil
Salt and pepper to taste
1 avocado, sliced (optional)
2 green onions, sliced
2 tablespoons sesame seeds
Instructions
- Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
- Heat a skillet over medium-high heat and add the vegetable oil. Add the chicken and cook until browned and cooked through, about 6-8 minutes.
- Reduce the heat to medium and pour in the teriyaki sauce. Stir to coat the chicken evenly and cook for an additional 2-3 minutes until the sauce thickens.
- While the chicken is cooking, steam the broccoli, carrots, snap peas, and bell peppers until tender-crisp, about 5-7 minutes.
- Prepare the bowls by dividing the cooked jasmine rice among four bowls. Top with steamed vegetables and teriyaki chicken.
- Garnish with avocado slices (if using), green onions, and sesame seeds.
