Tony Carretta’s Holiday Sausage

Holiday Sausage

A true staple of the season, Tony Carretta Holiday Sausage is offered exclusively at Palmer’s during the holidays. Palmer’s is proud to be the home of Tony Carretta products, bringing this beloved Rochester tradition to your table year after year.

Since 1966, the Tony Carretta name has been synonymous with exceptional Italian meat products crafted right here in our region. Their sausages are known for bold yet balanced flavor, careful seasoning, and uncompromising quality. The Holiday Sausage is a signature blend made from mild pork sausage enhanced with red wine, Romano cheese, and fresh parsley — subtle, savory, and unmistakably festive.

This oven-roasting method is the easiest way to cook Holiday Sausage while fully enjoying its delicate flavor. Roasting gently ensures the sausage cooks evenly without scorching the exterior, allowing the wine and cheese notes to shine.

Ingredients

Scale
  • 1 Tony Carretta Holiday Sausage rope

Instructions

1. Preheat the Oven – Preheat a convection oven to 350°F. Line a rimmed baking sheet with parchment paper or foil.

2. Prepare the Sausage – Remove the sausage from its packaging. Carefully lay it out on the prepared baking sheet in a loose spiral, spreading the links slightly so heat can circulate evenly.

3. Roast – Place the sausage in the oven and cook uncovered for 15 minutes. Halfway through cooking, flip the sausage and rotate the pan to promote even browning. Cook for another 15 minutes. Cook until the sausage reaches an internal temperature of 160°F.

4. Rest and Serve – Remove from the oven and let the sausage rest for 3–5 minutes before slicing. Transfer to a cutting board and serve in a spiral presentation for a classic holiday display.

Notes

Serve Tony Carretta Holiday Sausage as part of a holiday antipasto spread, alongside roasted vegetables, or sliced and enjoyed on its own. Its mild, savory profile pairs beautifully with crusty bread, mustard, or a simple green salad.
