Tony Carretta’s Holiday Sausage

Rope sausage cooked and presented on a holiday cutting board

You can prepare rope sausage in many ways, from the grill to the stovetop. This oven-baked recipe keeps the focus on the delicious flavors of the sausage itself—simple, flavorful, and perfect for the holidays!

Ingredients

Scale
  • 2.5 lb pork sausage ring (uncooked)
  • 1 tbsp olive oil (Optional)
  • ½ cup chicken broth or dry white wine (Optional, for added moisture)
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme, Optional, for added flavor)
  • Freshly cracked black pepper (to taste, Optional, for added flavor)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Sausage:
    1. Lightly grease a baking dish or shallow roasting pan with olive oil to prevent sticking.
    2. Place the sausage ring in the dish. If it doesn’t fit as a full ring, gently coil it to fit.
  3. Add Flavor (Optional):
    1. The Holiday Sausage already has great flavor, but you can kick it up a notch without much effort. Lightly brush the sausage with olive oil, and sprinkle with fresh thyme and a touch of cracked black pepper.
  4. Add Liquid (Optional):
    1. Pour the chicken broth or white wine into the bottom of the baking dish to keep the sausage moist and enhance the flavors.
  5. Bake:
    1. Cover the dish loosely with foil and bake for 20–25 minutes.
    2. Remove the foil and continue baking for an additional 30–35 minutes, or until the sausage is fully cooked (internal temperature of 160°F/71°C) and golden brown.
  6. Broil for Crispness (Optional):
    1. For a crispier finish, switch to the broiler setting for 2–3 minutes. Keep a close eye to avoid over-browning.
  7. Rest and Serve:
    1. Let the sausage rest for 5 minutes before slicing. Serve hot with your favorite holiday sides like mashed potatoes, stuffing, or fresh bread.
