Ingredients
1 pound Certified Angus Beef ® top round steak, cut into small strips (1/2-inch by 1/2-inch by 1-inch)
12 ounces bow-tie (farfalle) pasta
2 teaspoons kosher salt
1 teaspoon freshly cracked pepper
2 tablespoons vegetable oil
1 red bell pepper, deseeded and chopped
8 ounces fresh sliced mushrooms
1 pound fresh asparagus, cut into 1 1/2-inch pieces
1 (15-ounce) jar light Alfredo sauce
1/2 cup grated Parmesan cheese
Instructions
1. Prepare Pasta:
- Cook the pasta according to package directions, reserving 3/4 cup of pasta water.
2. Cook the Steak:
- Meanwhile, season the round steak strips with salt and pepper. Heat vegetable oil in a large sauté pan and brown the steak strips over medium-high heat for 2 to 3 minutes. Remove from the pan.
3. Cook the Vegetables:
- Add red pepper and mushrooms to the pan; sauté for 3 to 5 minutes or until the mushrooms are tender. Stir in asparagus and cooked pasta.
4. Combine and Heat:
- Stir in Alfredo sauce, Parmesan, and reserved pasta water. Bring just to a boil, then reduce heat and simmer for 2 to 3 minutes, stirring occasionally. Stir in steak strips and season with additional salt and pepper to taste.
Notes
Serve with a side of garlic bread and a fresh salad for a complete meal.
For added flavor, sprinkle with fresh chopped parsley before serving.
