1 Certified Angus Beef ® boneless ribeye roast

3 tablespoons kosher salt

2 tablespoons freshly ground pepper

Instructions

1. Preheat Oven: Preheat the oven to 450ºF.

2. Season Roast: Season the boneless rib roast on all sides with kosher salt and freshly ground pepper.

3. Roast Beef: Place the roast on a roasting rack, fat side up, and roast for 15 minutes. Reduce the oven temperature to 325ºF and continue roasting for approximately 2 1/4 hours for medium doneness (until the thermometer registers 130-135°F before resting) or until desired doneness.

4. Rest and Serve: Transfer the roast to a cutting board, loosely tent with foil, and let it stand for 15 minutes. Slice the roast across the grain and serve.
