1 pork tenderloin (about 1 lbs)

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried herbs (thyme or rosemary)

Instructions

  1. Preheat Oven – Preheat oven to 400°F. Line a baking sheet with foil or parchment.
  2. Season Pork – Pat tenderloin dry. Rub with olive oil, then season evenly with salt, pepper, garlic powder, and herbs.
  3. Roast – Place pork on prepared pan and roast for 20–25 minutes, or until internal temperature reaches 145°F.
  4. Rest and Serve – Remove from oven and let rest 5 minutes. Slice and serve.
